Summer cocktails are here
Ice-cold cocktails and summer are fast friends and this season, we highlight a few that are designed to beat the heat over long afternoons by the riverside. Each reflects our subtropical climate, making the most of Queensland's sun-kissed produce through ferments and fizzes, combined with favourite spirits from select distilleries.

A variation of the Tom Collins, Tanqueray gin, cucumber, fino, and coastal tonic make up this zesty cocktail. The perfect companion to seafood or salads, we love it alongside our heritage tomatoes, picked spanner crab, hijiki and dashi vinaigrette.

Meet the Sunbird — the ultimate thirst-quencher. Made from local Queensland pineapples, this blended-until-frothy cocktail mixes Pampero Blanco rum with ginger, pineapple and apple cider. Light, refreshing, and unmistakably Queensland in every sip.

Borrowing from the Singapore Sling, our version is light and invigorating, with the herbaceous floral edge of Shiso. Tanqueray gin, bright mango and a dash of Chinotto bitterness round it out — ideal as a pre-dinner drink.
