Hainan Style Salt-Baked Chicken
The ritual of Sundays at Supernormal continued through August, with families and friends gathering for a leisurely, shared meal. This time, we looked to one of the most beloved dishes in Singapore and Malaysia: Hainanese Chicken.
Our take made use of a whole chicken — the crown baked in a delicate salt-dough crust, and the legs slow-fried for a crisp, golden finish. It was served with fragrant chicken fat rice and three house-made sauces: sweet soy, ginger and shallot oil, and fermented chilli sauce.
Ideal for two to share, it was available every Sunday throughout August.
