Sundays at Supernormal

A new weekend ritual is taking shape on the river. Each month, we centre the table around a hero dish, alongside our à la carte menu. Designed to be shared, it changes monthly to reflect the very best seasonal produce.

It’s our way of letting the kitchen lead with what’s at its peak — Queensland produce at its finest, cooked with a sense of place and served in true Supernormal style.

This month’s Sunday dish is made for exactly that.


July Menu - Hainan Style Salt-Baked Chicken

This month we look to one of the most beloved dishes in Singapore and Malaysia: Hainanese Chicken.

Our take makes use of a whole chicken — the crown is baked in a delicate salt-dough crust, and the legs are slow-fried for a crisp, golden finish. It is served with fragrant chicken fat rice and three house-made sauces: sweet soy, ginger and shallot oil, and fermented chilli sauce.

It is ideal for two to share, and is available every Sunday from 11.30am throughout July.
